PayPal Payments Pro and authorize/capture payment capability.

We may move from our current card processor to PayPal Payments Pro, primarily for the ease of accounting that comes with the consolidation of payment methods. My question is, with the 3DCart, can placed orders be updated/changed? In other words, we can now "authorize" the transaction, then "capture" the funds once the items are ready to ship. This also allows us to add items to the order prior to shipping if the customer needs to. Can this be done using PP Pro? Any other caveats to consider?
