How to change which Listing is used?

I've searched every option in setup and design but cannot find how to change which Listing_0, Listing_1, etc. gets loaded. Only thing I've been able to do is copy and paste from one of the others into List_0. Thank you.

This is done in PRODUCTS>CATEGORIES under the advanced option for category. I think it shows as list type 1, 2 3 etc.
It is changed on the category level which is kinda nice, that you can list differently for your different item types. :)

Thanks Mark, that helps a lot. Curiously though it doesn't inherit from categories to subcategories, but it is flexible.
