Backing up data

I have always been one with the philosophy if "hope for the best, prepare for the worst". Along those lines, I have gone through and exported my customer data, order data and products into CSV backup files. That way hopefully I could restore and get back up and running quickly if disaster strikes. Is there anything else that can be backed up on the system that I am forgetting?

Your images are important too, unless you have those on a CD somewhere, re-sizing them and optimizing them for web use can be time consuming. The only way for you to back these up would be by using FTP and backing up the whole "Assets" folder.
