sub category question

I've started to get too many categories so I've created a few main ones and moved everything into sub categories. The only thing I don't like is the navigation. If you look at my site The PlantGuy- Canadian Aquarium Plants and click on the "plant Species" main category, it opens all the sub categories on the right. Is there any way to have it so that if you hover your mouse over "plant species" or even click it, the sub categories will show up nested below "plant species" instead of on the right? or is this just a function of the theme I'm using...

you might want to look into fly-out menus. Some of the free templates have these included.
